2) Graf Starhemberg is a cavalier unit. Once the palisade gates are opened, the green vienna defenders tend to pour out of it and wander eastward. I found Starhemberg therefore in the dock district in the east.
3) You will probably lose most of your units during the assault on the ottoman castle due to the sheer number of turkish unit counters (royal janissaries, imperial camels etc behind walls). So make sure to keep your 2 monks (1 missionary you start with, and 1 monk you liberate in the northern part of the map) ALIVE so that they can convert turkish units in the eastern countryside to help build up your army. Particularly, there is a barracks in the south east with lots of turkish units that can be individually lured out via conversion, just beware of the many hand cannoneers that make short work of converted infantry.
