Portable Fort
Now the portable fort: what do you mean by +50 max ubercharge? the uber lasts 8+4=12 seconds? And for the first uber type, do you mean that an airblast will push you further? This medigun is named "portable fort", so making it more "moveable" is pretty weird. Finnaly, have you realized how close your stats are to the quick-fix's one? Less overheal, but allows you to heal more.
Since it is a "fort"(so a static place allowed to take lots of damage, but that needs preparation), here is how I see it:
Pros:
Slowly regenerates target's ammo as well
+20% overheal (e.g. heavy max overheal = 170% of 300 = 510 hp)
+10% resistance of everything but melee on wearer and target
-25% knockback from damage sources
+50% uber duration.
Cons:
-10% healing rate
-15% uber building rate (so using the brainteaser, or blutsauger: uberbuild edition, is recommended)
The wearer's speed is the average between the wearer normal's one and the target's one
Ubercharge:
Deploys a sort of "holo-castle" around the medic. The medic becomes as slow as a heavy but enemies can't get through the holo-fort thing, and any damage getting in it (bullets, rockets...) is decreased by 75%. You can't heal anyone during uber, but any teammate inside the holofort gets a 25hp/sec (like your second mode) and a small ammo regen. Also, sentries thinks it is a wall, so no sentry, ally or enemy will shoot through it. However, it can still be forced with the wrangler, and if the sentry is inside the thing, it can target it's enemies inside the thing. It is kind of ironical that a "portable fort" is good at sentry nest killing.
These are just ideas I got while reading your post, they may be absolutely OP. It propably is.
I also like the idea of the holo-castle. It just sounds awesome.
In terms of the Brainteaser I like the idea of using uber as ammo, but I think since the items are in a set together they should synergize well. I don't think with these stats the items are simmilar at all.
Also WTF is the "Can only ubercharge twice in your life?" That just sounds weird.
Pros:
+20% Fire rate
Alt attack causes any attack for 10 seconds to do mini-crits (Can perform again after 40 seconds)
Cons:
-15% Damage
-15% Ammo reserve

Portable Fort:
Uber causes you and the person you are healing to do mini-crits and take 75% less damage from any source.
Pros:
+20% Ubercharge rate
+20% Overheal
Any allie 2 meters from you while you heal someone will regenerate 3 hp every second (Does not work through walls)
Cons:
When active, you take 20% more damage from any source. (Does not give you 55 resist against all sources when ubered, but instead drops the debuff and gives you 75% resist.)

Set bonus:

I don't really get why you want to make it a mini-kritzgrieg, because we already have the kritzgrieg. And, PORTABLE FORT. So if logic applies, then this medigun should be best for defense. And I don't think the portable fort debuff you gave is big enough, you aren't supposed to be a bullet sponge as medic anyway. Finnaly, about the brainteaser, this would only be good for battle medics, and the blutsauger would still be better.
EDIT: Wait, did you really added a set bonus actually alterring gameplay? Why do you think valve removed the already existings ones?
