How do I transfer a save game from the Nexus Mods (Epic) version to the Steam version?
I know I could probably just use the Nexus Mods version of the scenario, but I'd rather switch to the Steam workshop version for automatic updates.

You can't. You'll need to start a new save.

Most of us that have been playing a long time have started new games soooo many times just because we like starting over for some unknown crazy reason

I once used a save game where I had just left the starter planet as the copy point for a new game. After 4 or 5 copies a game update broke the save. That helped avoid the issue of getting reaquainted with slowness of the basic tools.

For this very reason I repurchased the ENTIRE collection of Snowrunner on Steam (over $100) after putting in 1200 hours on Epic. They had me so locked in there I said hell with it.

lol. I think the start is the most fun part. It's kind of like seeing if you can be just a pinch more efficient than last time.
