Basically the only two way I can achieve is hire the soldier who has it as a companion by using the mercenary perks. The other is use the medic perk to get back the fallen friendly cavalry's mount back. I think the chance they appear as traveling merchant or battle loot is extremely low. As the AI lords don't bring too many elite with them.
