Afaik, through event trader and via re-animating fallen demygryph knight's mount with 125 medicine perk

Currently you have to get lucky from post battle loot or they can show up in traders

Can you elaborate on this? I've talked to an influential noble NPC, but it does not give me an option to "procure" a demygryph.

Check the guy in Altdorf, he can get you one for a hefty price.

Choose the "Any interesting items" option in the dialogue, and he will give you the option to choose one demigyphy from the imperial menagerie for 1000 prestige points. As these are only available to characters with Imperial origin, any non-imperials will probably be locked out of this option.

ALTHOUGH: I have confirmed that the Beast Whisperer perk has a very small chance to produce demigryphs as well, as I did find one during my travels ^^
