Get yourself a hook, maybe even from the aerial garden itself, and move below the platforms that the garden mainly consists of, make your way to the spitflowers and when close enough, mine them with a pickaxe. They are tiles, not enemies, so you can't deal damage to them.
Alternatively, you can slowly make your way through the garden while building a roof above your head with solid blocks, this will stop the projectiles from hitting you.
