In CS it's really hard to reach any sort of cap (I'm not even sure there is one) where you start to lose control. In Portal 2, it's easy to lose all control when you go too fast. This is probably to prevent crazy air-strafe solutions to puzzles with fast flings.
To get around this, it's probably best to use the technique from the last bit of my video. It's pretty much like a tiny circle jump on every jump. Ideally, you will maintain a speed of around 300, even if you don't have any air control.
I used to play a lot of bhop in CS and I was good at it. LJ rec was like 254 I think, not awesome but I know how strafes work. But there is some difference in portal and I cant tell exactly what it is. It's like, the more speed you get the easier it is to loose it all. I have completed the map, but it's like after a few jumps I loose all control and I can only move straight forward.
How can I maintain control as my speed increases? Or is it impossible to maintain control at a certain speed, is that the difference?
