I'm using a craftable gravel bags mod that uses ~3 stones + hammer + sack to obtain a gravel bag.
Not the most realistic way, I know, but the problem is that gravel isn't an issue for me; bricks, instead, are very rare (as @agreubill, I'm playing with Normal to Rare loot options in custom sandbox).
And, just like @agreubill suggested, is there a way to make Clay forageable (like any other Forest Goods, stones, twigs, tree branches, etc.) and, maybe after "playing" with an hammer or bare hands or something and then cooking it (like Logs in your Blacksmith mod to make Charcoal), finally obtain Bricks?
Ancient civilizations used Straw, Dirt and\or Clay to make Adobe, even if I'm not sure that this kind of "Brick" could really fit your Building Time mod! xD

That will add craftable Concrete Powder under Survival (I think) and wallah problem solved. I also made a survivalist Fishing Rod to go with that recipe if you want that too. You will need access to both a water source to fish from and foraging area to make the Concrete Power. If you need help just let me know and I'll do what I can to help though it would be limited to mostly recipe crafting lol.

Helped my uncle last year to tear down an old, small brick house by using a sledge hammer and the walls were still resisting a lot of hits.
