I haven't added proper support for Frackin Universe's BYOS tech stations yet, so if you're using one in your ship, that may explain the inconsistencies. AVIAN has no support for FU's SAIL menu either, so if you have FU installed then NEKI will handle all of the FU tech station features. AVIAN should still appear in the Vanilla SAIL menu, if you click on it.
Additionally, you may have some mods that create quests I haven't added support for, which may be why AVIAN is appearing in them instead of NEKI.
AVIAN support is kind of a mess internally, and I've been considering splitting it into a separate add-on. I wish I could fix all this more easily, but I'm not much of a coder, and Starbound has its limitations.
Did I do something wrong? Does the order of subscription matters (I subscribed to A.V.I.A.N. first and to N.E.K.I. after)?

Okay so Starbound is a better game but I've been having fun with the Less Quality More Content one, Ground-bound (Terraria) so I hadnt seen this.

Cuetbound's SAIL isn't a full-on SAIL replacement, but a re-skin of the vanilla SAIL - therefore N.E.K.I should simply override it entirely, if the load order is correct :)

Otherwise, sometimes, you'll have NEKI speaking to you, other times you'll have AVIAN speaking to you, and other times NEKI or AVIAN will have something to add when the other one speaks.
So yeah, NEKI replaces some of AVIAN's dialogue and vice versa, meaning you won't get to see absolutely all the dialogue from one or the other.
Other than that, Saturnians are supported now.

Because after the update on September 30th,
When I use the server driver of openstarbound, it crashes saying that it can't find nonEKI's hologram in the object.
It works fine in single.
Also, the server runs fine when I use the backup mode from August 20th.
I'm holding my breath until this issue is fixed.

And when I looked inside the mod file, the comment "I'm hungry" was pretty cute.

If it plays, that means NEKI detects AVIAN's presence, which should mean it's working. If this doesn't work, it means something is broken. Either way, would you be able to post some of the .log files from the "storage" folder in your Starbound game files to Pastebin [pastebin.com] and link them here? This will help me figure out exactly what's going on.
You can also perform a "replace" operation to replace code with your own. This is what you do to overwrite vanilla features, or another mod.
Using these two operations, I wrote some code in my mod's files that first checks for AVIAN's presence (test operation) and then overwrites any necessary code to add compatiblity (replace operation). Starbounder has a page detailing it here, [starbounder.org] but it's hard to understand without first getting the basics.
