Apologies for the delay. To answer your questions:
Time isn't a factor, the most prominent factor is killing. So, for example, you may get a 0.01% increase in drop chance per kill (configurable) up until Zombex drops and then it resets the % chance once again.
The increase adds to the default drop rate.

how is the increase over time calculated?
How much time would have to go by for the increase to trigger?
And would the increase add to the default droprate like
Droprate = Default + Increase
Or
Droprate = Default + (default / increase)?

You should be able to call the item using Zombex.Zombex
Bites do tend to take a while to heal up too.
Bear in mind Zombex doesn't function correctly in single player though.
The way I had the mod handle the hunger cost before is really different to the way it needs to handle it when allowing users to configure it, but once I've nailed that I can add in the option for configuring health (and potentially other options) too!
It'll take a minute though as I need to make sure I can get it stable before pushing it out again
This is the only anti zombification mod that i'm planning on using so i'm glad you're so open to feedback :)
I've done a number of tests and i still progress through anxious, to quesy all the way to fever until I get zombified.
When you have a moment can you confirm if the zombex still removes the zombification?
I don't have any other zombification cures installed.

Those options should show up in the newest update (that was my bad with a syntax error)
Do I need to unsub and resub to get the latest version? I have launched the game but all of the sandboxvars are the same so I don't think the update has downloaded.
Updated - you should now be able to set the percentage of hunger and/or damage from using Zombex in the sandboxvars under the following:
hungerPercentage=
damagePercentage=
(1 =100%, 0.1=10%)

I can definitely add an option so players can define how much hunger/pain etc (if any) they want taking the cure to cause. Let me look into it :)
Would it be possible to make taking the cure to cause pain instead of hunger? I think in roleplay terms it's like the virus is being flushed out of your system but is causing the pain moodlet (no damage).

Bear in mind bites still take a good while to recover from using the default settings and not having appropriate traits that may speed up healing considerably.
Been running with a very narrow near vanilla modlist.
To be thorough, a modlist would be ideal along with any server logs.
