Elephants are notorious for dying off in transit if the terrain isn't right - You only have to look at Hannibal's campaigns to see the truth behind that.

Speaking of realism, I can tell you that ivory you can find plenty of in icy area in the North, the Walrus.
Also, speaking about the Elephant, that anymal does not like sandy area at all, more on dry and wodden planes.
