what also helps aginst the stress is to move the one plattform on the green side more to the center as it is to close to the guest and the pandas seem to love to hang around that ( at least in my game)

What i did to improve the use of downstairs:
set some snack automats at the end of each path downstairs.
What i did to improve the animal use of the shelter:
1. put one more shelter in each outdoor section for at least 1 panda so they can hide more. (here is the biggest concern to find or build something that doesnt destroys the awesome ying/yang set)
2. set up more "dont distrub the animals" signs.
stress level went significant down. i house 3 adult Pandas with 2 youngs in there.

The Waterlevel in Planet Zoo is limited every 1 meter. That means if you build at a level of 1.5m the level you want to reach is always 0.5m above. This blueprint is build at level 0 from a sandbox map. hope that helps
