If you are running a mod that adds old-age events (I think HIP does?) those might kill you. It's worth mentioning that if you add the trait via ruler designer, due to a bug, the immortality effect will not count. This is why it gives you a excessive amount of health - it's a workaround until the bug is fixed. I don't believe this bug effects addition via console though, so if you have a save file from before the character died, just remove the trait and re-add it and you should be fine.
