These are the maps you need when you want to practice against real players.
Of course here are only the best and fairest maps with high ratings in the workshop!
You'll also find some map specific arenas (e.g. Inferno banana training).

I gave my best sorting them by recommended weapon to use. The maps at the bottom don't have any recommendation given by the creator. However, as I said, these are mostly only recommendations, in most cases you can use any weapon on any map, if your opponent is OK with that.

Attention: If you're more into practicing alone vs. bots or the maps itself (e.g. learning recoils, increasing your accuracity...), try some of the maps from my Practice Maps collection!
