Whether or not I actually get around to implementing this, I can't tell you. But I'll mentally note it.
@Rizzly Bear, this sounds like an issue with the game's code, Steam, or MacOS itself. The mod has no control on how it's extracted. On Windows, the mod directory looks like "\Cookie Clicker\resources\app\mods\workshop\_zipped\" where "_zipped" houses each subscribed mod, then the game takes the burden of extracting/moving files to the parent directory ("\workshop\"). The mod itself doesn't use or contain any file or subdirectory named "Utility" (with or without a ")" in it), so I have no idea what's happening in your instance. As I don't own a single Apple device either, I can't really test functionality for that operating system.

THE ISSUE:
When extracted, the mod file contains a subfolder called "utility)", assumingly because the base filename is too long. Since the game only recognizes the contents within the mod folder without accounting for subfolders, the file isn't recognized as a mod and is not loaded in the mod menu or otherwise recognized. For whatever reason, this also means that when resubscribing after deleting the folder, the mod is not again extracted to the workshop folder.
THE FIX (for other people experiencing the issue, not the dev):
Fixing this should be obvious, but just move the subfolder to the workshop folder. I have no coding experience other than an intermediate understanding of Lua which means I don't have any advice to patch the bug but you're also the dev so it is kinda your job. Sorry.
