Как приготовить ароматный балык из толстолобика

Готовим вяленого толстолобика в домашних условиях. Рецепт простой и не требует сложных манипуляций. Единственное, что потребуется, это подождать, пока рыба просолится, а потом просушится. Но именно активных действий требует совсем немного.

Готовый балык из толстолобика можно есть просто с вареной картошечкой, класть на бутерброды, использовать в салатах или в качестве закуски (в том числе, и под пиво, например, при просмотре футбола).

Какую выбрать рыбу - особого значения не имеет. Просто чем она больше, тем толще получится балык и легче будет вынимать кости.

На 1 толстолобика весом в 1,5-2 кг, нужны такие специи:
соль крупная - 15 ст. л.;
сахар - 3 ст. л.;
лавровый лист - 2 шт;
черный и душистый перец - по 5 горошин крупных;
куркума - 2 ст. л. (для красноватого цвета, можно не использовать, тогда рыба будет светлее);
кориандр - 1 ст. л.
1. Рыбу почистить, удалить голову и внутренности, а также хребет, разрезав ее вдоль спины.

2. В миске или кастрюле смешать все специи, натереть ими рыбу и "спрятать" в них (рыба должна быть полностью покрыта специями. Если она не вмещается в таре, разрежьте еще раз пополам.

3. Сверху положите груз, например, банку с водой на тарелку. И солите рыбу 5 дней (в прохладном месте). Может проступить сок, это нормально.

4. Через 5 дней очистите толстолобика от специй, вымочите в холодной воде 5 часов, чтобы убрать лишнюю соль. Заверните в марлю и повесьте сушиться, например, на балкон. В сезон мух и прочих насекомых, сбрызните марлю уксусом, это их отпугнет.

Через 2 дня балык готов. Всего вам вкусного!
