Using "woman" in the same context generally sounds weirder, and even the game's language files are built on that assumption. "The Age of Woman" is not supported by vanilla procedural grammar, while "The Age of Man" is.
As for gendered character names, that's something that's not in the base game and there's no tokens to tell the game to. The original Urist was a lady dwarf, but like all names they're culturally gender-neutral.

From my investigation it looks like you need to add those words (and maybe some others too) into the language_words.txt file somehow. I have no idea how to mod this without editing the vanilla file though. My guess is that you need to either create a file with all the definitions for words that missing from the vanilla dictionary, or even add them all into the same file where you define new words for symbols. Something like this, for example:
[WORD:SHRUB]
[NOUN:shrub:shrubs]
[FRONT_COMPOUND_NOUN_SING]
[REAR_COMPOUND_NOUN_SING]
[THE_COMPOUND_NOUN_SING]
[THE_NOUN_SING]
[REAR_COMPOUND_NOUN_PLUR]
[THE_NOUN_PLUR]
[OF_NOUN_PLUR]
