I have yet to find a format to explain all config in a comprehensive and yet concise way. Best is for to try button yourself and see what they do. There is however few general things I can cover that will make your life easier:

• Right or Left seat?
  Exept the winch activation and the door under it everything can be controled from the two front seat. Left seat is the dedicated pilot seat. Its hotkey are focused on plane handling only. Co-pilot on the other hand can configure its control to do various task, simultaniously or separatly. Option are selectable the planel down left of co-pilot seat. Such as plane + winch, Plane + Harness, camera + water canon...
  
• How to lift container?
  First, you will want to connect the container adapter to the winch. Easier to do while on the ground. Once connected lock the winch mag to prevent accidental release of the adapter. To Accurately position Valkyrie over target throttle down "Vertical Flight Speed" all the way down. Connect RED electric mag first, this will extend its cable automatically, then connect yellow mag. By default "Vertical Engine Throttle" is not high enough to lift a container, raise it moderately (0.06 is enough for one) and press and hold UP until container lift. It may take a second or two if it doesn't then increase throttle a bit more. If you are careful, you can pick up two container at the time. Note that you can twist container trough Co-pilot hotkey or panel right in front of its seat.
  
• Can I use Autopilot while lifting container?
  Yes you can, there is two things to adjust before doing so. First, activate "Use Highest Distance", this is to prevent the Ground Following System(GFS) from seeing the container. Next thing to do to adjust GFS "Minimum ground distance" Higher you will raise it safer it will be, you can automatically add cable lenght with the button of the same name. Note that while it is perfectly possible to deliver container on or over montains, it is safer to configure the autopilot around them.
