I think it is a very organic decision, it really depends on the trees i want to use - because not all themes are suitable to use with a base map theme (the original theme you choose that also determines the trees that are offered).
I also look very much how the cliffs and mountains look
and - I do not like it when farm land is too much of a difference in colour from normal land.
So all that determines a theme choice. The LUT can help with making the colours (especially the fields) better for me.
1 important tip - mountains look very different with themes - so if you choose a theme, and make your mountains: you end up using the landscape tools to give them a look - and when you change the theme; all of a sudden they look bland, or ugly, or just meh.
So stick with your theme and LUT as soon as you start mapmaking.
I myself like making maps more than building a city ... maybe I have some god syndrome ... but i love to just create ... the real hassle is uploading it to this horrible - not(!) user friendly Steambrowser, it is also a real test to your sanity. because, they make it really hard (and hard to read with the colours, and no to adjust setting either. .. Thank heavens they didn't design Windows or or the Apple operating system) ....... we need to live , love , and learn from the game.
