I will say this right off the bat - This isn't a normal, modern RPG.

Many people came to this game expecting it to be a typical, albeit historical, power fantasy RPG, and you can find these people all over the "not recommended" section of the reviews.
As far as I can see, most of them miss the point of the game entirely.

"Oh, I got jumped by like 3 bandits and they kicked my ass what the hell??!?" - How about you try avoiding going off the road and into the woods when the game warns you, in no uncertain terms, that they are full of bandits, if you are not prepared? How about you don't come off the assumption that you, as the son of a blacksmith who lived a relatively easy life, can take on 3 armed people at the same time?

"I died and lost 81 hours of progress!!!" - You can't save whenever you want, you need to either sleep or to drink Saviour Schnapps for that, and by extension, you need to learn to manage your time and resources before heading off to a dangerous situation. That's entirely on you.
I found a horse at a bandit camp and it was my best friend since it always let me run away from dangerous situations very easily.

"The combat system sucks!!!" - That depends; The lock-on system can be difficult, but it is easy to switch targets. But if you want to be able to fully split your attention, and counter, multiple strikes from multiple directions from multiple people all at once, and somehow not get blindsided by the bandit that came from the bush behind you then yeah, the combat system does suck.

If you want to learn a skill you need to actually practice it to be able to do it successfully, if you want to kill a bandit camp then do so from afar or by stealth (preferably both) since taking on 4-6 people at the same time is suicidal, if you want to be seen in a positive light by others then don't be smelly, dirty, covered in blood, wearing semi-broken armor and carrying a rusty, dull sword that you forgot to clean and sharpen.

Is this really too much for a game to ask from you?

This isn't to say that the game doesn't have its share of flaws, mind you - the start of the game is relatively slow and controlled, hunting isn't fun, the writing isn't the best (it's not bad, but still), it can get buggy at times, combat in later stages can boil down to counter-attacking more than anything else, since most of your hits will otherwise be countered.

There are other issues that can be raised, and all of them are true and valid, But ultimately these things don't really matter.

When push comes to shove, Kingdom Come: Deliverance is a niche experience, offering a rather realistic and gritty open-world while doing its best to force players to break away from modern RPG metagaming and other conventions.
It's good at what it does, but does it do something that you would enjoy? Well, that depends on you more than anything else but if what you've read thus far sounds right up your alley then, by all means, give it a try.
