A game like this requires a lot of reading online, i even did this when i played Oblivion a decade ago, when i play ESO i have one display dedicated to the game and another open on the Elder Scrolls Online wiki, it makes the experience a lot better in my opinion.
The mounts are annoying to begin with, i've been playing 3 weeks and i'm increasing speed so i can get away from enemies quicker when they notice me, it is realistic that a horse would throw you off when attacked however, just very annoying.
This is my first MMO (i've completed Oblivion, hated Skyrim) i'm loving ESO so far, i'm sure i'll be playing it for months, i don't find the grind that bad because there's quite a lot to do if you mix up with Faction / Guild Quests, Delve / Public / Group Dungeons, Dolmans and Overland Bosses.
Skyrims vanilla graphics sucks. If we are talking about the original skyrim.
