Thexder has a rendition of Moonlight Sonata:
https://www.youtube.com/watch?v=rAw32CyHNAo

And there is Adiago for Strings (G Minor) from Rise of the Triad (which is MIDI, so not exactly chiptunish):
https://www.youtube.com/watch?v=3Tt13_XvLkI

OPL version (track is at 50:07, closer sounding to chiptune):

The Tetris music is probably one of the most popular examples:

[Tetris (NES)] Music 1, an arrangement of Dance of the Sugar Plum Fairy from Tchaikovsky's "The Nutcracker".
https://www.youtube.com/watch?v=KdPevomELLc

[Tetris (Gameboy)] Music C, an arrangement of the menuet from J.S. Bach's French Suite No.3 in B Minor (BWV 814)
https://www.youtube.com/watch?v=p2r7Co7Fl_g

The Lemmings soundtrack consisted mostly of arrangements of classical or traditional music. Some examples from the Sega Genesis version:

Jacques Offenbach: Infernal Galop
https://www.youtube.com/watch?v=8P2OBf18Rfw

Wolfgang Amadeus Mozart: Rondo alla Turca (Turkish March)

The Parodius series is filled with classical arrangements:

Parodius (GB) - Labyrinth (Tchaikovsky's "The Nutcracker Suite - Russian Dance")

Gokujou Parodius - Capsule Monster "Cappuccino" (Mozart's "Turkish March")

Too many in Parodius as Chudah said, but here's some others:
Bach's Toccata and Fugue in D- in Gyruss
https://www.youtube.com/watch?v=TNc7VdD-ink

also in Battle of Olympus
https://www.youtube.com/watch?v=bW81SqY6aPM

Beethoven's Moonlight Sonata in Earthworm Jim 2
https://www.youtube.com/watch?v=ftzOcDsxn6E
https://www.youtube.com/watch?v=mZ1696B0ZbA

Mozart's Requiem in D Minor K.626 Dies Irae in Fatal Fury Special
https://www.youtube.com/watch?v=FwAhw0uQT-g

Tchaikovsky's March from The Nutcracker in Dynamite Headdy
https://www.youtube.com/watch?v=d1SS7QkwDq0

Tchaikovsky's Piano Concerto No. 1 in B-flat minor, Op. 23 in City Connection
https://www.youtube.com/watch?v=vxk4m2Efk-0

Tchaikovsky's Swan Lake in Final Fantasy II

Wow, I'm happy to see this has really taken off! I think my favourite thing so far is seeing that orchestra sitting there playing the music in the background for the Fatal Fury Special level. :)

The Earthworm Jim soundtracks also contain an excerpt from Night On The Bald Mountain by Mussorgsky in the track "What The Heck?!"
https://www.youtube.com/watch?v=JykNUqNNQj4

Elite II version of Night on the Bare Mountain:
https://www.youtube.com/watch?v=umph9S4iCho
There was more in the Elite II / Frontier: First Encounters soundtracks too - the Blue Danube, some more Mussorgsky, Greig's "In The Hall Of The Mountain King", and Wagner's "Ride Of The Valkyries".

Some more...

Sid Meier's Pirates! (C64) - some harpsichord-esque music, apparently Bach and Handel in there (but I don't know exactly what)
https://www.youtube.com/watch?v=m-BLyQ6oj_g

Tales of The Arabian Nights (C64) : Scheherazade by Rimsky Korsakov (and some terrible early digitised voice work)
https://www.youtube.com/watch?v=HmY1Vblwqks

China Miner (C64) : Maple Leaf Rag by Scott Joplin
https://www.youtube.com/watch?v=Yg7RBFTAD4g

Hover Bovver (C64) : Country Gardens, Percy Grainger
https://www.youtube.com/watch?v=-yk6jG64RXk

Parodius made me think of another Konami series...
Sports Day - Tokimeki Memorial (PS1) : Csikós Post by Hermann Necke
https://www.youtube.com/watch?v=5as8tVG2eig

Tetris (Arcade) : based on Kalinka, by Ivan Larionov
https://www.youtube.com/watch?v=mgUdwsQyY_s
I played Tetris in the Arcades before on console or Gameboy, so I associate Kalinka with Tetris more than probably everyone else. For me it's lots of fun to find videos and watch the Russian Red Army Choir sing Tetris music...!

Dracula's Castle, 2nd part - Castlevania II (GB) : Passepied, by Claude Debussy

Are you interested in non-chiptune arranges too? I could name a bunch more ps1 and later era...

Earthworm Jim 2 also has Funiculi Funicula by Luigi Denza
https://www.youtube.com/watch?v=i_KfTchsqDM

Mozart's Eine kleine nachtmusik in Mario Bros.
https://www.youtube.com/watch?v=Ilw1WqNSgPw

Mozart's Rondo Alla Turca in Final Fantasy V
https://www.youtube.com/watch?v=OP1qd9NRXYQ

also in FFV Debussy's Arabesque
https://www.youtube.com/watch?v=CysEtb-4jio

I'm not that fussy. I'll be happy with "anything that isn't just a digitised recording of real instruments"!

I can't believe I forgot about Funiculi Funicula! I remember playing EWJ2 back in the 1990s with my family and my granny started singing along to the song, and my brother and I were shocked; "this song has words?!" XD

One more I just remembered:

Figure Skating event, Winter Games (C64) : "Waltz of the Flowers", from Tchaikovsky's Nutcracker

I started putting these tracks into a YouTube playlist, and adding new things to it there.

I hope that's ok with you all? :)

Hi all, resurrecting this thread to add: In Sid Meier's Pirates! for NES, there are a couple baroque classical songs:
Handel - Water Music Suite No. 1 HWV 348 (1717), (excerpts of both minuet and bourree from this piece, at the introduction and when information appears on screen)

Bach - Two-Part Invention in G Major, BMV 781 (ca. 1720) is played at the governor's mansion.

Thanks! I had included Pirates! but I didn't know the names of the original pieces.
