Casting the Barrier when the fight start will absorb most if not all the damage from the main attack, if a dodge is failed; it then cast said attack maybe 20-30 seconds. If both the dodge and the barrier "fail" then a potion will heal it completely (and those potions recharge when you do damage, so make sure you spend more time attack and doing damage than you might in other similar games).

There is a scary wind attack however if you get close to the Gryphon this (visible wind attack) can't hit you. This give you time to attack the boss freely, which in turn, helps you recharge your potions.

The fight is rough and overtuned for reasons that are not the fault of the players, it's just a question of either teaching the players better or challenging them more gradually. I'm sure the devs have made note of the many complaints related to this unbalanced fight.

Also yes you are partly right but I have had Steam since it was released in 2003. I have been with it through its ups and downs. They were not always this behemoth. They worked to be where they are.

The enviroment that Epic provided is funding for the game's development, probably even able to extend development time to make the game the best they can.

Here is the problem I have noticed. Most of the games Epic pays for are sequel games. Not all of course but the big ones are sequels (Borderlands 3, Alan Wake 2, LOTF2 Etc.) to games that were popular on steam. Then Epic grabs the rights to the sequel trying to force people who liked the first game over to their store. That to me is just bad business both on Epic's part and on the part of the Devs because the Devs know where the players are.

Why do the graphics in this game seem so bland and boring?

Turning it on solved the flickering borders bug on battle maps for me.

I am waiting to buy it to see if it can be played in pure offline.
With no hints and no news on this I will not pre order the game.
