1. Two cars currently - one with two variants. (a third car if you try the beta branch.)

2. Yes there's parts option. Currently a stock setup, and then bolt on goodies which you can purchase and unlock as you level up.

3. There's objectives in the default Main Branch build. That's the one where you earn money and XP to level up and unlock more tools, equipment and bolt on goodies.
You start off doing jobs on customer cars, but eventually you'll be able to buy used cars via the classifieds, and also unlock the ability to go racing. (you don't drive though. You're the pit crew, and have an AI driver assigned to you who also levels up the more they race.)
The Beta Branch is really just a sneak peek at stuff that's currently in development so is a little buggy in places, but that's where the MP and sandbox stuff currently is while it's all still being developed.

As for videos showing the one chassis - Going back to point 1 here too, currently in the default build there is just the one tubular chassis that is used between the two (three) different models/variants.
There is a hatchback available in the beta, but all of that stuff is still a work in progress. It will all eventually be pushed to the Main Branch as the new default game once the devs are happy with it and have ironed out more of the bugs, and finished adding all of the bits and pieces they're trying to add. The wiring harness etc that's currently shown in the store page is only in the hatchback in the Beta at the moment as yet again, that's all stuff still in development.
There's also a V8 motor planned - an LS motor, and some bits (head components only I believe) are already shown in the catalog in the main branch build for people to buy and mess around with until the whole motor is eventually finished and released. I'm assuming that will mean you'll be able to do engine swaps between the inline 4 cylinder, and the V8 once it's done and eventually released.

The best place to see exactly what's going on is on their Discord.
They post in their #things-we-are-working-on channel as and when they have updates to show or speak of regarding the things they're working on.
Jim (one of the devs) is often popping on too, with Alec (the other dev) making the occasional appearance, and they engage directly with the players.
Obviously it's not continuous though as all the time they're chatting they're not developing... and they don't want the game in Early Access forever.

So yeah. That's kinda where the game is at at the moment.

I should also just point out that the reason updates have been been few and far between recently is because they're totally overhauling the entire game code from the ground up to make future development and integration of new game features easier going forward (including, as far as I'm aware, preparing for potentially adding modding support further down the line), and they're also in the process of overhauling the current game loop too so as everything eventually all aligns.
Eventually, all of this, plus the stuff that's currently in the Beta, will all be polished up and ironed out, then all brought together in the Main Branch as the new default game for everybody.
Lots in the works to look forward to.
