Steam it's self is a form of DRM. There are maybe a few game (about 5-10 maybe) that have no DRM. None of those are huge titles.
You can play almost all Steam games in Off-line mode (just not any multiplayer components). You just need to connect back about every two weeks to maintain
Some games contain a 3rd Party DRM. This should be stated on the games store page, either on the right hand side or in the system requirements.
Some 3rd Party DRM may require a constant internet connection for some/all of the games features. Games For Window Live for example.
Offline mode is unlimited, you don't have to connect in every two weeks. Unless you have some anti-virus/PC Cleaner or some other dubious piece of software clearing your steam login details on a regular basis.
There is a thread about it:
http://steamcommunity.com/discussions/forum/1/828937979095845728/
As well as one in the old Forums:
http://forums.steampowered.com/forums/showthread.php?p=34472009
And a quote from the SSA:
"...you must have a Steam Account and you may be required to be running the Steam client and maintaining a connection to the Internet."
That is a very...convoluted thread with games posted all over the place. Hard to tell how many there are and you have to search to find the ones they say can run.
The list of drm-free games are on the first page.
http://www.gog.com/forum/general/list_of_drmfree_games_on_steam/post1
Also, have another thread...more specifically, have a post in that thread:

It's both funny and sad that moderators are still spreading that misinformation regarding offline mode.
When you start off on the last post and people are expecting the first post, it does get convoluted.
It is funny and sad that others think we know everything and single us out for their own ends.
None the less. Thanks for the correction.
Feel better?
