this is not totally true.. for example Fall Out and Bioshock they already exist for Mac, but just other stores sell them. would be great to find both also here
Another case is when the developer already decided to limit the game to specific platforms just because they think that's the most marketable way to do it. Now, if another company shows up and says, hey, If you're not going to port your game we'll do it, just sell us the right for platform X. Now this is a totally different story. The company who bought the rights is now responsible for the port they release.They will have to keep the game bug free and offer support. The original developer has distanced himself from that specific platform. This is what happening to the games that are mentioned in this discussion. It's very impracticable to bundle products from 2 different companies as one single game. You can't just split the profit between both companies.

Porting games over to mac is easier said than done. You know how people say you can never catch a virus on a Mac it is because the coding for viruses that destroy pcs is different compared to a mac, and most house holds have PCs, why would someone go out of their way to write a virus for a computer when the said person could write a virus and destroy thousands if not millions.
Now take what I just said and put inot a business aspect. Mac coding is completely different than a PC and the average user is on a PC than a Mac.
Let us put into simpler terms say there is over 200 million pc users and there is only 1 million Mac users (hypothetical here), would you spend the resources to port over games to Mac when making bank lies within the PC community? And if the said company does not have the OSX software, they have to pay, plus the labor, the testers, etc, for they have to make sure that the game runs the exact same on pc and it did not break. So in this sense,for one game, it will be stripped bare and built back from the ground up.
I will give you that, mostly, however, there maybe a contract between Apple and said gaming company that prevents the computer versions of certain games to be released anywhere else. Pretty much saying "You can sell this game here and only here until said contract is up". And this would not be the first time Apple did something like this with a product. For example: Look at how long the iPhone stayed being an Cingular or AT&T product.
Also, to add another game to the list of Games you had listed off, Borderlands: Game of the Year Edition is on the app store as well.
