It doesn't take much for flies to breed. The smallest bit of old food could have dropped behind something to start it off. Obviously they particularly love things like meat as eggs will incubate well on them.
So again, you're better off doing as I suggest. Once you get behind there and pull things out, the flies are going to buzz off everywhere and keep annoying you. If you plant some borax and sugar down, it's easy - they pick up the mixture, take it back with them and kill all of them. Boom.
best to remove fridge and investigate what going on back there.
Hire an exorcist.
Occasionally we have guest just up and leave in the middle of the night because they are so bad. We don't charge them because we know there isn't another inn with 100 miles that isn't overcome with flies.

Put a couple of those bad boys in the yard and you'll take out all the flies.
And your pets.
And your neighbors.
Could be anything from some rotten food that went bad in the fridge, to something like a dead opossum/squirrel or rat in the walls or crawlspace. --Depending on where you live it'll be different.
jokes aside, get rid of those rotten onions and... whatever. i had one in my basket and didn't even realize i bought them while ago & they were the source of those ♥♥♥♥♥♥♥ pesky flies
