Mozzarella is the answer. No joke.
Mozzerella cheese melts the most optimally so its on Pizza, Grilled Cheese Sandwhiches, and other foods more often than other cheeses. It has the best taste and bacterial count than other soft cheeses like feta. Goat Cheese comes in second. As far as nutritional value, Mozzerella falls short compared to hard cheeses that are packed with calcium and vitamin a and b12 like parmesean and Swiss.

I like these. I don't like Bleu and Colby Jack. I don't think you could pay me to eat Casu martzu. I might consider eating Pepper Jack at some point.I will eat the whole thing and it's like $5
