You ask for a way for you to be "invicible" but still see what other people do, sorry, but that sound a bit like a stalker feature.
If you want to relax, set it to "offline" and when you need to know what your friends are doing, go back online, why do you need to be able to look at them without they know it?

Looked at your previous profilenames, and now I think your request sounds creepy as hell.
So you basically want away to stalk your friends.
Yeah. Not gonna happen.
But I wouldn't mind a small custom info box under your name but above what game you are in or when not in a game above the message "online" on your friends list.
I know you can do this with non steam game and write w/e you want for the title like sleeping, idling, or w/e.
Just turn off notification sounds and any notifications you don't want displayed in game? That's what I did
I guess many things (that weren't intended for stalking) can be used to stalk. Just a feature that would be helpful for some. I understand why you would say that it could be used for stalking but I guess that's a problem depending on the friends you have.
Nonetheless, I wouldn't consider being able to see what video game someone is playing as an act of stalking; regardless of whether or not you are seen as online. It's not an overwhelming breach of privacy.

Ultimately, though? Not sure the OP's suggestion really "does" anything, so...a bit underwhelming? I don't think Valve should make it a priority.
