It really depends on the person but these are games I can play when my pain kicks up and can't move my hands much.
Both these organizations are fabulous for assistance whether it be just advice for getting custom controllers or getting them to contact devs to improve games, or simple game reviews for games that you as a disabled person can play (especially the latter example, caiplaythat).
Able Gamers is a charity run by two very admirable and lovely guys, Mark and Steve, and they predominantly operate on getting any disabled person access to games, whether providing assistance with customised controls and equipment or just getting help with your favourite games and the devs involved.
caiplaythat is operated by a few people but created by a legally blind guy and it's fabulous for it's reviews that offer advice for a range of disabilities.
SO I don't have any specific games off the top of my head, but hopefully this'll help you in future.

You say she has issue with her left hand. I'm assujming this is what would normally be the "keyboard" hand (versus the "mouse" hand)?
If it isn't, then I's seriously consider changing to a different type of mouse, if that would help. I have grip issues, due to knock on crap from spina bifida, and I HATED using mice for years. I'd quickly get horrible pain across the back of my hand.
Then I tried a "marble mouse" from Logitech. Never looked back. I've still got that original one and it still works fine, but I've also had two more since then. They completely cured this issue becuase you don't move the mouse at all. It's just a trackball.
So if it's relevant, consider that.
Thank you for the kind words. I truly wish your mother well, and I know personally how important it is to find things to relax to (and also playing games is a great way of taking your mind off of pain, in my case).

Following is a very well-done cheesy soap-opera Diner Dash clone (but reflexes is a must). It's inexplicably entertaining and intense if you can revel in the melodrama. Just roll with the daytime soap opera :D I highly recommend the whole bundle because the stories are best played back to back:

I think these two might be a choice, but i have to ask her about it. The gifting isn't a secret to her, i just dont want the pricetag be what keeps her from enjoying a game, so if she likes what she sees then it would properly be either sims, puzzle games, point and click adventures or something like barn finders would properly also be a decent pick.
