Why a remake? Because it would fix the worst of the games while keeping the best. It's impossible to fix narrative well, but it is very possible to fix controls and gameplay when remaking. Especially Dawn of the dragon holds quite well and its enjoyable and fun (apart from the lack of enemy lock-on target and flight being implemented not so great).
In Legends, I found the whole story to be beautiful, it explores more mature themes like sacrifice, abuse, manipulation, war etc. It reminded me how Sonic went from this goofy classic theme to a more mature theme as well, which made it to be very popular with comics, tv series, movies and so on. I see no reason why Spyro couldn't go this direction and become less kiddy-cute. Don't get me wrong, cute is nice but Skylanders tried that and while the games were fun, it was 1-2% Spyro and 98% characters just to sell toys, a well thought cash-grab which is an impressive marketing scheme.
Hopefully Legends remake will happen one day, since it has Cynder and she is an awesome and well liked character.
I also disagree with the story aspect of these games - other than the early game and ending of A New Beginning, I found them very forgettable with barely anything going on. Spyro 3 had a better story than these games did and it wasn't even the main focus.
In contrast, Dawn of the Dragon was the only game in the trilogy I actually liked and would consider to be underappreciated for the reasons you mentioned. I really loved its story and characters, the ending felt like the perfect sendoff for the entire franchise and Guide You Home was a great track to play during the credits that represents the game's narrative perfectly.
Gameplay wise, it also fixed every single issue I had with the games Krome Studios made. Most levels actually had exploration like the old games with secrets to find, you can replay your favourite parts of the game and/or find anything you missed with a level select feature (baffling that Eternal Night didn't have this given it had collectables) and the combat was a lot more fleshed out and interesting.
I do fully agree with you, the main issue is definitely gameplay of the games, even Dawn of the Dragon suffers from invisible wind preventing players from flying higher than intended or lack of lock-on enemy feature.
All of those issues are easy to fix with a remake, because it would be possible to make single unified combat system (an enhanced version of Dawn of the Dragon combat) to be present across all remade titles. The game would definitely also benefit from enhanced enemy AI which is possible nowadays technology as well.
Graphic enhancements? That's a given, considering Reignited trillogy, they might as well use the reignited Spyro character design to be used in A New Beginning and Eternal Nights remake, which saves them tons of work (no need to re-invent a working wheel again). The 3d models of Cynder people made for reignited? Work already done for them. Cynder is just a reskin in Dawn of the Dragon anyway, she plays exactly the same
I believe they could even use most of the assets that were already made for Reignited for map design as well, because it's the kind of style that doesn't age, which would mean all they would need to do is add just some missing assets + enhance the old level design to make them less linear and maybe build upon the cutscenes a bit for easier story flow. Play aroun with lightning and shaders a bit and the darker / gloomier atmosphere is easy to achieve.
Story? Dawn of the Dragon is perfect, maybe they could flesh out some tiny parts and A New Beginning and Eternal Nights definitely have a core direction, which could also be enhanced a bit with a remake.
Point is, making a Legend of Spyro remake wouldn't be some sort of impossible effort for any game studio, even a small one. In reality an indie gamedev could do it using Unity + Playmaker, if Activision weren't so fond of slapping DMCA at fanbase left and right.
Wish Toys for Bob would pick it up since they are independent now, it's very doable within their current capabilities and there is a fanbase. The way I always see it, OG Spyro is like Classic Sonic, and LOS is more like Modern Sonic and we all know that a more modern version exploring more mature themes of sacrifice, war, abuse etc, is what opens a market for an aging audience. Sonic went this road and it didn't suffer for it.
