Can't say I care for the remastered soundtrack. I have heard a few of them on YouTube, they're okay. But to me, the music cannot be changed/remade.
Been toggling between them while playing, and actually prefer the remastered ones. Much better quality, and more natural instruments. Better mixing too, with extra bass and clarity. There's very little reason to stick with the old music, aside from nostalgia.

The only one that stood out to me was the Volcanic Cone (?) level in Spyro 2, with the weird vocal groaning. It's a lot clearer in the remaster and sounds like someone is growling in my ears...

I played through with the remastered music and enjoyed it a lot. Then went back and listened to old fireworks, and it was good but I found the new one fine as well.
For the most part I prefer The original. The remastered soundtrack feels too soft compared to the more hard-hitting tracks Copeland had produced (he’s a drummer so it kinda makes sense). Some tracks like Gulp’s Theme actually do sound better than the original, though.
IMO they did a pretty good job remastering the soundtrack. I like the og and reginited ones equally.

Copeland did both OSTs.

Copeland only did the title screen music for Reignited. Stephan Vankov handled the remastered tracks, though he did have access to Copeland's original source material.
As someone who played Spyro sinced i was a kid, i prefer the classic ones. But i have to say that i like the dynamic music mechanic, it's really fun.
It is okay. I prefer the original mostly for nostalgia sake. But it is not bad at all.
Playing Remasters/Remakes always with original soundtrack.
I feel like the remastered soundtracks sound okay in their own right, but i'll always have my preferences for the original. It's too bad the game has such a ♥♥♥♥♥♥ loop for the originals. Some of them end abruptly in the middle of a loop, and it sorts sucks. Hopefully there will be a mod that fixes this at some point.
You can change the music?

Yes, you can freely toggle between the two in the sound menu for the game.

If you're right, I was lied to. D:

According to SDCC panel, Stewart found MIDIs after Stephan finished the soundtrack.
