Some instruments can require parts made specifically of glass, silk, bone, and metal, all at once.
Making instruments is possibly the most time and labor-intensive effort possible in Dwarf Fortress outside of Mega-Projects. It takes a lot of setup to make sure you have all the right workers and workshops, you need to double check to make sure you have all the necessary resources and that they are where they need to be, and then you need to make sure you are crafting all the right individual pieces in the correct numbers for different instruments which may or may not share the same parts, and then you finally need to make them.
If you are early into your fortress and just need something to put in your tavern: Consider buying instruments off of traders. Just as a warning, they are fairly expensive. Instruments sold to your fort can range from 1000-9000 Dorfbucks.
It's better to just buy instruments.
