It's still in EA and honestly may not be what you're looking for, although I thought it's a game worth keeping an eye on.
Space station 13, never played it.
project zomboid has some similarities with CDDA, not as deep tho.
factorio & ONI has plenty of depth.
Heard some good things about Unreal World, KeeperRL, NeoScavenger.
Some other stuff out there that's more base-building/simulation but I'm kind of overloading here. lol
The creator of Dwarf Fortress also made a game called Liberal Crime Squad, available for free. Here's the wiki[lcs.wikidot.com] (I'd recommend the 2017+ version). You commit crimes to sway public opinion, and as your heat and notoriety build you go from SWAT teams raiding your base to tanks, bombers and Seal Team 6 knocking down your doors. It's all pretty tongue in cheek, but there's a lot of depth and variety in things you can do beyond straight combat, like seducing strangers to act as sleeper agents to kidnapping and interrogating Conservative Scum or running a Liberal newspaper. Worth checking out, I think
It's not just the ability to do anything you can think of that makes DF great though, it's the combination of that with the insane realism and procedurally generated content and depth of detail that all combine together. You won't find any other game anywhere that has all 4 of those bullet points anywhere close to what DF gives. The fact that DF is adding native graphics and a real user interface will keep it on track for being the best computer game ever developed.
Servers can vary a lot, but all of them have a ton of depth. I'll talk about Goonstation specifically, because it's what I know the most about. Some of its features include:
- A chemistry system for making medicines, poisons, and whatever else
- Individual organs and limbs which can be cut out and replaced with different ones, such as replacing your leg with a monkey's or stapling an energy sword to your arm stump.
- A full DOS-style terminal system, including a programming language and a packet system for some machines to communicate over wires (which, of course, you can hijack)
- A teleporter that requires math to convert coordinates into the teleporter coordinates, with a ♥♥♥♥♥♥♥♥ of content to explore including an ARG
A ton of the fun of the game comes from seeing the dumb things people manage to do and the stories that come out of it, much like dwarf fortress
