Most of those stats don't really make much impact vs trash bloons because they already 1-hit them and have enough pierce that more is not needed. The real impact is vs moab class, bosses, and super ceramics. Degree 50 isn't going to be noticeably better than Degree 51. Degree 30 is kind of a "this is fine" spot to aim for.
Generally speaking, degrees very slightly increase attack speed (or cooldown), pierce, and damage, for all attacks and active abilities. Passive abilities like bucc's 6 grapples (the best attack in the game by a landslide) do not get buffed.
If you want the specifics, i strongly recommend googling "btd6 wiki." No one knows those numbers offhand.

Obviously you haven't looked into the formula for damage.
Whereas for bosses its at multiples of 20 at D20, 40, 60, 80, 100 (20n)
