Middle path: low cost through tier 3, large payoffs if you wait to collect, tier 5 cool-down great for late-game, money is wasted if you don't micro manage it well, no farmer needed
Bottom path: self collects so no micro or farmer needed, but lower payoffs.
My rule of thumb: go 2-3-0 if you have plenty of space and plan to go late game (including one 2-5-0 for late game). If you have little space and/or just need a trickle income to stay ahead, 2-0-0, 3-0-0, or 3-2-0 may be better.
