Top path: lots of money at a regular rate to be used at any time but higher payouts are a huge investment (tiers 4 and 5), requires constant micro (gathering with mouse/touch) or a farmer
Middle path: low cost through tier 3, large payoffs if you wait to collect, tier 5 cool-down great for late-game, money is wasted if you don't micro manage it well, no farmer needed
Bottom path: self collects so no micro or farmer needed, but lower payoffs.

My rule of thumb: go 2-3-0 if you have plenty of space and plan to go late game (including one 2-5-0 for late game). If you have little space and/or just need a trickle income to stay ahead, 2-0-0, 3-0-0, or 3-2-0 may be better.

Monkeyopolis with 8 4-2-0, and you're golden to get a max Vengeful Temple by round 115

most per round income is the first path, the bank path will pay itself off the fastest but you have to wait(mainly for late game when teir 5s cost huge amounts of money), and the third path is mainly for utility and ease.( good if you have a water map and want to boost the income of buccaneers.

With all the costs of the farms how many rounds till each pay their cost and start generating actualy income?

It depends on which difficulty you are playing in, so it's hard to answer that without a lot of math and a long post, but here is all the data if you want to figure it out yourself:
