Would the game run on the new Apple's M4/M4 Pro chip?

You could perhaps purchase the game and give it a try? If you play for less than 2 hours the Steam policy says you can have a refund. Quote: Users can request a refund if they've played the title for less than two hours. I already own the game, you can see the mouse icon near my nickname. I'm one of the fools who preordered the Deluxe Edition.

It would be true the contrary in this case. I would need to test the new Mac Mini, lol.

I really doubt it.
There is no Mac support for this game.
Even if you emulate everything I doubt you would be happy with the results.
It's not only that an intel/amd CPU needs to be emulated (which slows the M4 down), I'm pretty sure the GPU part is completely incompatible with the game's system requirement as it seems to have no builtin DirectX support at all which then needs to be emulated as well (way further slow down) - if there is even any software which would do this.
