What does producing raw materials really bring? it's about mining stone, coal... etc

I guess I'll be the first to say it.

There's no benefit to it.
It's just a dead end production chain where it demands stuff which isn't valuable and produces stuff which isn't used by the CIMs.

It doesn't even keep Chirper quiet because they'll only say "Wow I work at the best job ever" instead of "Where are all the jobs at" xD

It provides jobs and reduces the cost for industries using the raw resources, leading to those companies coming to your city, providing more jobs and ultimately reducing cost of the end products that your cims are buying. Excess resources may also be exported. You gain tax revenue from exports, industries and businesses, and providing your cims with cheaper goods means they will have more money to pay rent or upgrade their homes.

However, it's not necessary to produce raw resources as they can also be imported. It will be more expensive, but if you want to build a city based on immaterial goods and white collar work, and if you don't want to deal with the pollution from industries, not building those industries is perfectly fine.

Your taxes from companies comes from profit, not gross revenue. By having those raw materials available locally, it not only gives companies access to cheaper resources, it also saves them money on transportation costs, increasing their profit margins which in turn increases your tax revenue.
