Cannot get above 6000 people in a city and i get only small density demand...

It will go back after reaching a bigger city status. And then you can "overzone" it. Everything will be fine ^^ ...also TAX THEM HARD.

Maybe just focus on detailing a bit with paths and trees while the game is running. I have all demand bars full. You have to give cims a chance to fill up your existing buildings but also find jobs and schools, as soon as you don't try to give new housing for a while it picks up. (pro tip: do not try to satisfy all low density res demand, then they just want more)

Also what is your unemployment like? Maybe you have enough people. Check your demand bars extended view to get ideas about what they want. And you need a college for higher demands.
