Most likely you won't have any interaction with other players, won't see other players, won't talk to other players, won't trade and so on.

Offline means the character is saved to your hard drive, change hard drive / computer and your character disappears, you can always play your character regardless if servers are up or not

Online means your character is saved on the game's servers, you play as long as servers are up, can't play when they are down. If you change computers or hard drive and re-install game your characters will be waiting for you
