Military victory is the most time consuming, but also the easiest. Pick a science civ, they excel at anything really. Korea, Maya, Babylon, etc. One day you will find that Immortal no longer brings much of a challenge!

Growth until end-game strategy - then intentionally stagnate to max production and science. Internal food routes early (perhaps tech to get the trade routes). Convert to production for end game.
Try some of PC J Law's videos (youtube). Designed for deity, of course, but it works on immortal. Also, his videos are primarily quick speed, so the timing will be different for standard. Some tactics too - more difficult to war on quick speed. You shouldn't need to use the cheesy great scientist scheme (save to bulb through high-bulb techs), but it speeds things up.

I advise against Great Library on Immortal - it's high priority for the AI. Losing it wastes too many hammers and the gold doesn't make up for for the time and hammers. But, to each their own.
