Best mod, IMO, is Start With Edit Wands Everywhere. I don't think I could go back to playing without it. The game is so much better when you have it.
There's also a Nanoha pack I have that comes with mods to start with Rising Heart or Bardiche which are wands with 5 slots, no shuffle, 500 mana capacity and 2 Spark Bolts so you can add the Spark Bolts from your starter wand (if running EWE) and start with a slightly better starter wand.
I also use mods to start with 200HP and to double the life of gold nuggets. Even with 200 HP it's pretty easy to die if you're careless.
* If you don't mind spoiling some of the exploration, look up a map. I think on the Noita discord someone's posted a really high res version of a full map. It'll show you some secret pockets and bonus areas on the first/second floor where you can sneak in and grab potentially stronger wands (at the risk of stronger enemies.) Made the game way more enjoyable for me.
* Read up on making AP (Alchemic Precursor) and LP (Lively Concoction.) I always run my seed number through an AP/LP calculator online to see if the materials needed might be achievable in my run.
* Look for always-cast wands. They can be serious game changers.
As for mods, it depends on how broken you enjoy the game.
God Mode:
* CheatGUI - simple, easy, spawn anything and everything. Great for getting to learn those spells / perks you'd never touch in a regular run for fear of insta-death.
* Goki's Things - A more advanced game editor that lets you edit almost everything and can make the game harder or easier. A bit too many options for me, I prefer cheatgui. Once you get a good blend of options though it's just turn on and go.
Different Gameplay Styles for Variety:
* Random Loadouts - default mod made by the Noita team. Gives some variation to the game & doesn't require beta branch.
* Selectable Classes - Pretty much random loadouts, but you get to choose your starting class instead of it being random.
* Custom Characters - Most of the custom character mods are more than just sprite edits. They can have custom wands and abilities. Check them out and see if they suit your gameplay style better. (Some have infinite flight, others start with flasks or stronger wands, etc.)
* Noita Quicksave - Lets you save/reload, making this game less of a Rouge-like and more of a dungeon crawler. Drastically changes your gameplay style since you can just reload and keep going, allowing you to put hours into a run.
Makes You Better at the Game:
* Show Enemy Healthbars - Recommended to learn the HP of the enemies, then disable. This mod is very buggy and frequently crashes, but it really helps you get a feel for "I can fight this" vs "Nope time to run."
* Wand Workshop - Helps you practice wand building by merging wands to make better ones, gives you a better idea of how the stats work and what you want to look for in normal runs. I used it a few times but found myself trying to make the "perfect wand" rather than enjoying the game, so I deactivated it after awhile.
Small Mods to make things easier:
* Start with Edit Wands Everywhere - Lets you grab spells off wands and wand craft from the very beginning. Great for getting into the game and increasing your survival rate (so long as you don't get stabbed while editing wands mid-level.) Can make the game a bit too easy, but your mileage may vary.
* Start with Extra Health - The extra HP gets you through the beginning sections, but won't break late-game difficulty.
* Increase Gold Timer - Makes it so gold doesn't vanish so fast.
* Passive Healing - Slow heal over time to encourage exploration.
* Glowing Health Upgrades - Makes those HP+ containers glow so you can find them.
I wouldn't recommend adding in mods that alter the biomes, change the map, or add new spells until you've already explored the standard map and standard gameplay. I found these mods tend to make the game harder. Think of them like post-game content for people who've sunk tons of hours into the game.

I had the teleportium(?) quirk that teleported you to a random location when hit, a lively concoction, and a wand that set you on fire. I used the wand to damage myself and reroll my position over and over while nursing the concoction when my health got too low, allowing me to basically skip entire areas by just teleporting until I saw the portal. It wasn't very fun because I ended up avoiding all confrontation and didn't pick up any new wands or upgrades.
Pretty much it varies the game up a lot more while giving you more ability to experiment and have fun doing so. I had that gripe you had when I was playing too. I'd get to the second place and die too much from being too underpowered all while having wands be all to similar that I'd come across.
