When he first appears you are free to hit him as much as possible as he won't retaliate; its only when he starts moving around you that you should be careful.
The more you move around with either Analog Stick, the lower will be the probability of you executing a proper deflection. The key therefore is to lock onto him, using R3 and not move as much as possible. When he gets close to you, get ready to press LB. By not moving around the analog sticks, you actually are able to hit him faster, as moving around with the sticks, dramatically increases the time it takes to launch a successful hit, using RB.
When he Jumps up in the Air, remember to stop attacking ASAP and get ready to press LB two times, as he will jump up two times in a row and land two crushing hits.
You have to remember this: Once your near his horse and he starts swinging his spear, he will ALWAYS hit you much faster than you think he will. The key to deflecting his blows therefore, is to press LB a bit faster than you normally would. (Press it in advance)
Being near him often prevents you from seeing his full body, due to the Camera's Field of View being obfuscated by his full image. In that situation, I usually 'play Defense' and cease my attacks, as you sometimes can't tell when he's gonna start swinging. Try and time your parries with the sound that he makes; you can often tell when you should start parrying him, because his swings always makes a 'whoosh' sound before he is about to land a blow on you.

If you gave up the first time around at a point in the game where the hype should still carry you anyway, I'm not sure you will get a lot out of trying it again.
I know, it sounds mad said like that, but not every gamer is build equally - and out of all the people I met playing games there was not a single one that gave up on a Soulsborne title to later come back to it and then suddenly find fun with it.
If you try it, I'm all for you experiencing fun and good times, of course I am. I just have some doubts if you will EVER have fun with this game when the spectacle of Gyoubu and the relative earliness of his appearance weren't enough to carry you up the learning curve the last time.
The bull that comes next can be won with a similar strategy. Just run a lot and you will dodge a lot of attacks and get opportunities for some quick attacks yourself.
Though do note (it doesn't apply to this boss) that some enemies have attacks that can be deflected but will still damage you on a successful deflection.
