Combat system is closer to Sekiro than any other game is, focus is on timed parries rather than evasion, feels satisfying to play and focuses more on humaniod-like enemies, especially light saber combat etc.
Not nearly as great as Sekiro, but still good games.
There's also that furry side scrolling indie game that the devs have said are inspired by sekiro. Has the same parry focused gameplay.
The demo is out, no sign of when it's coming out though

Additionally, I'll also recommend Sifu for sure. Great combat system, very satisfying, and while short, there's plenty of replayability and an extra Arenas mode to keep getting some nice challenges out of the game.
Game for the story and amazing world level-design (aesthetically and planned) but easier combat (not like AC or the like, very different)&(Since you liked SW: Jedi Fallen Order)
God of War (very souls-like on "Give Me God of War" difficulty), Bloodborne (my 1st souls) has an amazing ambience, Witcher 3 (great adventure), Elden Ring (Awesome, except the dungeons... and level-design is not 'souls'-like ironically due focus on open-world, also think the Bosses are too HP heavy for solo-play though).
I just thought of 2 more games. Not as hardcore as Sekiro.
Metal Gear Rising Revengance- Raiden from the Metal Gear Solid series as a cyborg ninja. Screaming soundtrack, frenetic fighting. "Zandatsu" mechanic where you're able to cut "almost" anything into a bazillion pieces. Game is about 8 hours long on first play.

Nier Automata. More RPG than Sekiro or Revengance. The combat isn't as deep but is good fun. (Light/heavy attacks, dodge/parry mechanic.) Also has a really good way of delivering the story which requires multiple playthroughs. Features an asynchronous multiplayer where you can loot dead players who are playing the game.

Sifu: Will probably try it, i'm not fully convinced, its shame it doesn't have a demo.
Lies of P: not into the setting but, the weapon crafting looks neat.
s0D0 : Have played Fallen Order, i wanted to play the Survivor aswell (the new fight styles looked interesting) however i heard that the port is really bad and they haven't fixed it.
Kix : will try Nine Sols' demo soon, it looks like my kind of game.
Divo : Thanks, today i played through KANNAGI USAGI, it was a fun, but its something i would rather play before Sekiro to find out if Sekiro's combat for me or not. After Sekiro it was a one and done game.
Sir Diealot : I'm not sure about Nioh 2, just watched ZeroLenny's video regarding that and it seemed like there's a huge inconsistency of difficulty in the second half of the game.
Alexoferith : I have to say no to mods. I also have some bad experience with them, i'd rather stay away if possible.
LightLance : thanks for reminding me! Seen Iron Pineapple's video a few weeks ago and i really wanted to try that game!
ViciousFishes : Thank, MGR-R is already on my wishlist, just never got to the point of actually buying it. I'll might also give a go to Nier Automata, i heard it's great.
Nier Automata is a sequel to Nier Replicant, also available on Steam. Again, you don't need to have played the previous entry but you will miss certain Easter Eggs if you haven't. That game is built around replayability with multiple endings.
