Throwing further back a bit you can also try the DMC games playing Dante in Royal Guard which has a timed block mechanic which can be pretty broken, but has a way tighter timing than deflections in Sekiro.
Jedi: Fallen Order... as already stated again... but wanted to mention, you NEED to play this game on the highest difficulty. Period. It's the only way that the parry system is precise and strict enough to relate to Sekiro. Parry window is linked to difficulty.

I guess Nioh 2 would be the next best imo. Its different and more complex with tze build, but you can stick to Katana if you like. There are some really cool enemies and bosses.
You can try Nioh 1 first but Nioh 2 is the bettter game with more mechanics. Its basically 70 % Nioh 1 again tho. So i would directly go for Nioh 2 if you havent played 1 yet.
Thymesia is cool but very short.
Wolong is fine but gets boring at the end because its not as deep as Nioh 2 and the bosses are not as fun as Sekiro.
I cannot recommend Jedi Fallen order really. It has 3 cool lightsaber fights, the rest was quite basic imo. Cant say nothing about the new release tho. Havent played that yet.
This is quite correct. As mentioned also, there are not that many cool bosses with decent mechanics, but the combat feels very nice overall.
