Could you be underleveled? What's your attack power? Also, which Corrupted Monk it was? The first one?
perhaps confetti did help, but the damage was already so low that the bonus damage was negligible and it didn't look like it helped in the slightest.
it was basically like trying to beat Yhorm without the Storm Ruler. Not very exciting...
To prevent this from happening the axe is a decent prosthetic, allowing you to do big damage after the stab attack (mikiri counter the stab then use the axe).
It is also possible to use snap seed to deal a big chunck of damage and stagger her a bit.
Some attack offer a bit of opening to deal some extra damage, for examples when she does the swipe instead of double jumping on her head you can hit her twice in the air and possibly once when you land.
In general just remember her left arm acts a shield, it is possible to dodge to the side instead of deflecting to get behind her and deal damage without using items and prostethic.

If you defeated all of these before fighting phantom corrupted monk, you would have 7 attack stat. If you skipped headless ape, you will have 6. So go fight the guardian ape, then come back.
Once you have enough attack, make sure to get all the prayer beads you can get up until that point.
NOW, you are ready to fight corrupted monk and have the maximum attack and defense prior to this boss (which you should ALWAYS have because it is the only way for the game to be reasonable in difficulty instead of requiring you to learn the boss perfectly).
Here's what to do:
1. Bring 10 fistful of ashes and 10 snap seeds
2. Use a fistful of ash right in front of the monk, this will flinch them and give you time for exactly 2 normal sword strikes. Immediately throw another fistful of ash after those two strikes, repeat until you have no ash left. Then do the same with Snap Seeds until they stop working. If the monk isn't dead yet, hit her till she dies. Done.
The game also hints you in loading screen that try to reduce enemies vitality if their posture recover very fast. The corrupted monk in mibu village will have a very slow posture recovery after its vitality drop to ~50%.
You can also play the game in dark soul style where you back off when (mini-)bosses doing combo attacks (in this case, the spinning / thrusting attacks) and then dash attack them in their recovery time to reduce vitality.
How was I suppose to know which order to do the bosses in? I don't even know where any of the monkey bosses are.
And then it was another gruelling marathon of perfectly parrying every one of its attacks for aaaaaaaages until it's posture finally depleted.
