I'm trying to not spoil much, but you definitely have more than just 2 paths.
Monks tend to appear in large numbers. Use stealth to thin their ranks and focus down stragglers if you end up fighting a group. The ones without weapons are really bad at blocking your strikes (though they can still deflect you on occasion), so aggression works well. Prosthetic tools like firecrackers can help you keep large groups at bay if things get out of hand.
The monks with the huge straw hats are an exception. They're among the toughest enemies in the game imo. Thankfully they're quite rare. I'd recommend going out of your way to stealth-kill them whenever possible.
Exploring more of Ashina Castle first is a good idea. Try exploring the rooftops around the locked door.
