Here are some tips for fighting him. There is a meme going around that all you need in this game is parry. This is absolutely not true against this boss. You are much better of just using the run button to try to space him properly. If you block or parry him you will be stunned and flung away, but if you space him instead you can get in a lot of hits on him. Always try to get behind him and make sure to abuse his leap attacks.
You pretty much cant break his poise if he have more than 25% health left so you might as well not try. Worst case scenario the first phase is vulnerable to fire crackers and... fire. (A little cheesy though) The second phase is vulnerable to the umbrella (and sometimes the spear.) Even the normal umbrella protects well against the scream.
Phase one is all about running and getting in hits and staggers when you can. Firecrackers help, but they have a long usage cooldown on the ape, 13 seconds. Jump the first grab attack, sprint and circle around the second grab.
Phase two is all about deflecting. Jump to dodge both perilous attacks. Run when you see the terror scream tell.
Stage 2 aka the easiers one. Buy a terror flask to get one shot. Equip a spear.
enemy has only 2 real attack: running towards you and sweeping in whic case you just jump and get free stun OR combo which you shoul parry. if you parry that attack your ape will fall on the ground and you need to use SPEAR to hoock vermin inside ape's neck. That adds massive amount of poise dmg and make solo ape easiest boss in the game.
This is absolutely not at all true unless you try to block or deflect a grab.
this is not true dude. i was usually just deflect all of his attack and did less running around, even with my base stats character challenge run. i did only run when avoiding his jumping-grab attack, his terror scream or if i want to get a better position. as long as you timed your deflect correctly then you will be okay. and also about his poise, he usually get staggered after 5-10 hits continually.
ohh, if you mean by his "poise" is his "posture" the you are kinda right, because usually i just ended up depleting all of his HP bar eventhough i deflect all of his attacks. but i think you can break his posture if you already have ascending and descending carp skill? i'm not sure, i didn't try it.
This is true for many other bosses like Owl and Corrupted monk as well. But in their case its even worse because if they miss an attack they get pulled out of balance for a while and sometimes cant continue the combo. While if you deflect the attack, they will take posture damage, but they will also continue the combo.

i did that hit & run strats on my first playthrough too, that is actually the most effective way until now. and then on my later playthrough i just learn how to deflect all of them. i am also agree that is not very efficient way to fight him. but hey, it is fun you know. took me about 3-5 hours to master it only on guardian ape.
for owl actually you can just go agressive, he shouldn't be really much a trouble. and for corrupted monk actually similar with guardian ape only she do a faster combo, all you need to do is perfect deflect her or just hit and run. unless you're gonna using consumables/prosthetic/or even cheese her.

No, you aren't. Stop lying. This only applies to specific attacks, and those attacks often have long recovery times that leave the boss vulnerable. For Guardian Ape, he only does this at the end of his 4 hit combo that ends in a leaping attack, and said attack leaves him open to a few hits after deflecting the attack. For Headless Ape, it's only his overhead slam that causes this, and after deflecting that attack it leaves him stunned long enough to hit him with 2 regular attacks followed by mortal draw. None of the other attacks will knock you back and stun you if you deflect them.
