What are the conditions for Sekiro to know the identity of Demon of Hatred?
I gave all 4 sake to all three characters. I eavesdropped on all the Emma/Sculptor conversations. I exhausted all their dialogues. Sekiro still did not know.

I've seen videos where Sekiro calls him by name and tells the old woman he knows, and they say it's something to do with the above actions, but there must be something else.

After a bit of testing over multiple playthroughs, my best guess is giving all types of sake to everybody but if you tried that and it didn't work I'm really not sure. The sake was the only thing that consistently did it for me.

Don't know if it's relevant, but did you also talk to the old woman after the Gyoubu fight? She mentions some stuff about the flames of hatred.

I can't be 100% sure that I've not forgotten something, but here are some of the key elements:

1. After Dragonrot begins to spread, you will return to the Dilapidated Temple and see Emma kneeling by the Sculptor. Sneak round the back of the temple and eavesdrop on them for some dialogue.

2. After the Gyoubu fight, speak to the old lady in the same building as you meet Tengu to receive some dialogue about the hatred that is created by wars.

3. Make sure you give the Ashina Sake given to you by Emma to the Sculptor.

4. When performing the required steps for the Purification ending, there will come a point when Emma says that she will visit the Old Grave. DO NOT GO THERE IMMEDIATELY! Instead, go to the Dilapidated Temple and - again - you will see Emma and the Sculptor sitting together. Go round the back and eavesdrop on them to hear Emma tell the Sculptor that she will take up the burden of killing him if he turns into Shura again. After this, reset the area (i.e. rest at a Sculptor's Idol) and Emma will have left. Speak to the Sculptor and he will tell Wolf that it should be him and not Emma that grants him death in the event he turns into Shura.

5. Continue with the steps of the Purification ending: go to the Old Grave, then back to the Dilapidated Temple (again) and eavesdrop on Emma and the Sculptor one more time to learn that the Interior Ministry is attacking. Confronting Emma after this will reward you with Father's Bell Charm.

... I think if you do all these things, then Wolf will identify the Sculptor during the fight. In fact, I'm not even sure if the last step is required, but the others almost certainly are.

See, I'm actually not sure the eavesdropping is even necessary because in the first run where I got the fight dialogue I didn't eavesdrop at all, only gave everyone all 4 types of sake. I'll do some more testing on my next playthrough but it still seems weirdly inconsistent.

Oh. I had no idea there was an eavesdrop opportunity there.

Ah. Step 4 must be it. I have never done that.

I just had this situation! Emma came back to Ruined Temple and was sitting with Sculpter! But I haven't seen eavesdrop oportunity 😞

I only managed it on my first playtrough and I didn't do step 4 or met the conditions for the purification ending by the time I had beaten the Divine Dragon.

EDIT: The one thing I remember being different in my first run, is me getting a dialogue towards the very end with the sculptor saying "You're the one that will defeat me" or something like that, which I didn't get in any of the other playtroughs.

EDIT2: I also only ever eavesdropped on the very first conversation Emma and the sculptor have when he gets sick. And another thing I do remember about my first run was getting more dialogue from the old lady before the castle gate at some point near mid-game, which I never again got in the subsequent runs.

I hope I didn't happen to get it out of glitch (seeing my case seems to be the odd one out), and if not, maybe some of this information can help clear what the conditions are.
